Ingredients: 2 cups gluten-free all-purpose flour. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 eggs. 1 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup fresh or frozen cranberries. 1/2 cup gluten-free chocolate chips. 1/4 cup chopped walnuts optional. Zest of 1 orange optional.
Instructions: Preheat your oven to 350F 175C. Grease and flour a 9x5-inch loaf pan. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce. Begin and end with the dry ingredients, mixing until just combined. Fold in the cranberries, gluten-free chocolate chips, chopped walnuts if using, and orange zest if using. Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy your delicious gluten-free cranberry chocolate chip bread!
