These cookies are crunchy on the outside and chewy on the inside, making them practically perfect!
Peanut butter cookies are simple and classic. I've loved them since I was a child! Just looking at the pictures makes my mouth water. I'm already plotting how to steal more out of the cookie jar without anyone noticing!
Makes: 18-20 cookies
Duration: 1 hour 30Ā minutes
What you'll need:
- 1 cup of peanut butterĀ
- 1.5 tsp baking sodaĀ
- 3/8 cup all-purpose flour (1/4 cup + 2 Tbsp)
- 2/3 cup of sugarĀ
- 1/4 cup unsweetened applesauceĀ
- 1 tsp pure vanilla extractĀ
- 1/4 tsp saltĀ
Directions:
1. In a stand mixer or large bowl, combine your peanut butter, applesauce, and vanilla extract.
2. In a medium bowl, combine your dry ingredients (sugar, salt, and baking soda).Ā
3. Slowly incorporate your dry ingredients to your peanut butter mixture to form a dough.Ā
4. Roll your dough into cookie balls (~ 1.5 Tbsp in size) and refrigerateĀ for an hour.Ā
Note:Ā RefrigeratingĀ your dough will make the cookies softer.Ā
5. While your dough is chilling, or after it has chilled, preheat your oven to 350 degrees.Ā
6. Place your cookie dough balls onto cookie sheet and bake for 8-10 minutes.Ā
Note: The cookies will appear to be underdone when you take them out, thatās OKAY! Let them firm and cool for 10 minutes before moving them.Ā

When it came time to bake, I was super excited - but nervous - and cranked up the oven to bake two boules. After baking one at a time, they turned out beauuuuutifully!š I even allowed the first one to cool 90% of the way before slicing the end off for sampling. Itās delicious!š I canāt wait to make more bread recipes, especially because Corey and I loooove sourdough.

What better way is there to brighten up a Monday than with a hot, sweet cinnamon roll?Ā
On Sunday mornings, my parents used to make me and my sisters cinnamon rolls before Sunday school and church. We called itĀ āCinnamon Roll Sundayā. If iām being honest, I intended to post this recipe so that it would align with cinnamon roll Sunday, but life got the better of me. So, here it finally is: a cinnamon roll recipe that is straight forward, delicious, vegan, and easily made gluten free!Ā
Servings: ~10 cinnamon rollsĀ
Duration: ~1.5 - 2 hoursĀ
What youāll need:Ā
For the dough:Ā
- 3 Tbsp vegan butter (such as Earth Balance)
- 1 packet instant yeast (~2 1/4 Tbsp)
- 1 cup of almond milk (or your favorite milk substitute)Ā
- 1 Tbsp cane sugar
- 1/4 tsp salt
- 3 cups unbleached all-purpose flour *to make this recipe gluten free, substitute for a gluten free flourĀ
1.Ā In a large sauce pan, heat the almond milk and vegan butter until warm and melted, never reaching boiling. Remove from heat and let cool to the temperature of bath water. It should be warm but not too hot or it will kill the yeast.
2. Transfer mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes. Then add 1 Tbsp sugar and the salt and stir.
3. Next add in flour 1/2 cupĀ at a time, stirring as you go (you may not add it all). The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball.Ā
4. Rinse your mixing bowl out, coat it with olive oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size.
For the filling:Ā
1.Ā On a lightly floured surface, roll out the dough into a thin rectangle. Brush with melted vegan butter and top with sugar and desired amount of cinnamon.
2. Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife, cut the dough into ~1.5 inch sections and position in a well-buttered 8x8-inch square or round cast iron skillet.Ā
For the topping:Ā
1. Brush with vegan butter (melted) and cover with plastic wrap. Set on top of the oven to let rise again while you preheat oven to 350 degrees.Ā
2.Ā Once the oven is hot, bake rolls for 25-30 minutes or until slightly golden brown. While your rolls cool, make your icing.Ā
For the cream cheese icing:Ā
1. Beat the dairy-free butter and cream cheese together, then add vanilla and beat again.Ā
2. Add powdered sugar 1/2 cup at a time until you reach desired consistency and sweetness.Ā
3. Your frosting will be thick, but spreadable. To thin your frosting, add 1 Tbsp of non-dairy milk at a time to reach the desired consistency.Ā
4. Drizzle your icing over your cinnamon rolls once they are slightly cooled, this will prevent the icing from melting too much.Ā
