Christmas flavoured ice cream is a thing
Choc chip scones

1 ½ cup flour –> 375ml 1 ½ tsp powder 28g unsalted butter (12mm) ½ cup Jalna Greek yoghurt –> 8 tbsp 3 tbsp caster sugar 80 ml almond milk 1 tsp vanilla (scant) 3 tbsp choc chip–> dark
Cut butter into tiny cubes, put in freezer.
Mix flour, powder.
Mix yoghurt, sugar, milk and vanilla in small bowl.
Cut butter into flour mixture using fork and knife/fingers.
Pour wet into dry, mix with knife till nearly combined. Add choc chips and knead a couple times till JUST combined.
Put on paper-lined tray, pat into circle about 20cm diameter. (Didn’t even add all the liquid but it was very sticky already.)
Chill in fridge for 10 minutes, then slice into 8. (Didn’t really separate them because too sticky – apparently they rise better when close together tho.)
218 degrees – 13-14 min till toothpick comes out clean
Prep took ½ hour, felt like so long though. Everything is super easy except for cutting the butter into the flour which took like 15-20 min probably >_< altogether still very efficient - do washup in the 10 min chilling time, then no baking tin to wash afterwards :D
Took out of oven at 15 minutes.
Scone is only very slightly sweet on its own but the chocolate chips make it too sweet and there is an abundance of choc chips - so can reduce sugar to 2 tbsp + 1 tsp.
Best scones I’ve made yet cos the honey + yoghurt taste used to be just a bit weird whereas plain sugar imparts sweetness without any other (impure lol) taste.
Very moist. Oh also, can’t taste the almond milk, but maybe it did make a little contribution in reducing the yoghurt taste cos I can’t taste yoghurt much either.
NOTES:
Next time 60ml almond milk
Reduce sugar to 2 tbsp + 1 tsp

I’m getting good at this .... using leftovers for awesomely tasty AND healthy food! Previously did chocolate muffins with applesauce and chocolate sour cream. Once again, proud to introduce another recipe made with leftovers!
I had some overripen bananas that I’ve mixed with the staple ingredients, some leftover coconut cream, milk, oats and choc chips.
Had some extra applesauce from a different cake recipe + some extra chocolate sour cream from the coffee cheesecake.
So proud of myself for being able to come up with this amazing chocolate muffins recipe that contains applesauce, chocolate sour cream, oats and choc chips.
