Try these rich, gluten-free chocolate almond cupcakes that don't need any flour. They are perfect for people who want a sweet treat but don't want to use flour.
Ingredients: 1 cup almond flour. 1/2 cup cocoa powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted. 1/2 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup semi-sweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners. In a mixing bowl, combine almond flour, cocoa powder, baking powder, and salt. Mix well. In another bowl, whisk together melted butter and granulated sugar until smooth. Add eggs and vanilla extract to the butter-sugar mixture, and whisk until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until you have a smooth batter. Stir in the semi-sweet chocolate chips into the batter. Divide the batter evenly among the cupcake liners in the tin. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can optionally dust the cupcakes with powdered sugar or top them with chocolate ganache or frosting of your choice. Enjoy your delicious flourless chocolate almond cupcakes!

Ingredients: 4 tbsp almond flour. 2 tbsp cocoa powder. 2 tbsp maple syrup. 2 tbsp coconut oil. 1/4 tsp baking powder. Pinch of salt. 2 tbsp dark chocolate chips. 2 tbsp almond milk. 1/2 tsp vanilla extract.
Instructions: Mix the cocoa powder, maple syrup, baking powder, salt, and almond flour in a mug that can go in the microwave until everything is well mixed. There should be no lumps when you add the vanilla extract, almond milk, and dark chocolate chips. It will be done when the cake rises and is cooked all the way through after one minute on high. Wait a minute before you serve it. Have fun!
