A flavorful and gluten-free twist on the classic Indian butter paneer, wrapped in gluten-free tortillas to make delicious burritos.
Ingredients: 300g paneer, diced. 2 tablespoons ghee clarified butter. 1 onion, finely chopped. 2 tomatoes, pureed. 1 tablespoon ginger-garlic paste. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. 1/2 teaspoon paprika. 1/4 teaspoon garam masala. Salt to taste. 4 gluten-free tortillas. 1/4 cup chopped cilantro leaves. 1/4 cup dairy-free yogurt optional.
Instructions: In a skillet, heat ghee over medium heat. Add onions and saut until golden brown. Add ginger-garlic paste and cook for 1-2 minutes. Add pureed tomatoes, cumin, coriander, turmeric, paprika, garam masala, and salt. Cook until the mixture thickens. Add diced paneer and cook for another 5 minutes. Warm the gluten-free tortillas according to package instructions. Place a portion of the paneer mixture onto each tortilla. Sprinkle chopped cilantro leaves over the paneer mixture. Roll up the tortillas into burritos. Optional: Serve with dairy-free yogurt on the side.
