A tasty and wholesome burrito recipe made with whole wheat tortillas and roasted veggies and black beans. Ideal for an easy and filling dinner.
Ingredients: 1 cup black beans, cooked. 2 cups mixed vegetables bell peppers, zucchini, onions, etc., chopped. 1 tablespoon olive oil. 1 teaspoon cumin powder. 1 teaspoon chili powder. Salt and pepper to taste. 4 whole wheat tortillas. 1 cup cooked brown rice. 1 cup shredded cheese cheddar or Mexican blend. Salsa and guacamole for serving.
Instructions: Preheat oven to 400F 200C. In a large bowl, toss mixed vegetables with olive oil, cumin powder, chili powder, salt, and pepper. Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until vegetables are tender and slightly browned. While vegetables are roasting, warm the black beans in a saucepan over medium heat. Warm the tortillas according to package instructions. Assemble the burritos by layering each tortilla with brown rice, black beans, roasted vegetables, and shredded cheese. Fold the sides of the tortilla over the filling and roll tightly to form a burrito. Serve the burritos with salsa and guacamole on the side.
