The rich flavors of chai masala spices combined with the buttery goodness of cashew nut shortbread cookies will delight your senses. These cookies are ideal for afternoon tea or as a sweet treat at any time of day.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1/2 cup finely ground cashew nuts. 1 teaspoon chai masala spice blend. 1/2 teaspoon vanilla extract. A pinch of salt.
Instructions: Melt the butter and mix it with the powdered sugar in a bowl until the mixture is light and fluffy. Mix in the chai masala spice blend and vanilla extract until everything is well mixed. Slowly add the all-purpose flour and cashew nuts that have been ground up. Mix the dough until it holds together. Add a little salt to the dough and work it in slowly until it forms a smooth ball. Split the dough in half, making two equal parts. Make a log out of each piece that is about 1.5 inches across. Put the logs in the fridge for at least an hour, or until they are firm. Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. The dough logs should be chilled. Take them out of the fridge and cut them into rounds that are about 1/4-inch thick. Don't crowd the cookie rounds on the baking sheet; leave some space between them. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are golden brown. After the cookies are done baking, take them out of the oven and let them cool for a few minutes on the baking sheet. Then, move them to a wire rack to cool completely. Put the Chai Masala Spice and Cashew Nut Shortbread Cookies in a container that won't let air in. Serve and have fun!
