Ingredients: 2 cups of Greek yogurt. 1/4 cup of low-carb sweetener e.g., erythritol or stevia. 1 teaspoon of vanilla extract. 1 cup of mixed berries e.g., strawberries, blueberries, raspberries. 1/4 cup of chopped nuts e.g., almonds or walnuts. 1 tablespoon of dark chocolate chips optional. A pinch of salt.
Instructions: Put the Greek yogurt, low-carb sweetener, and vanilla extract in a bowl and mix them together. Mix the sweetener in well until it's all mixed in. Add the mixed berries to the yogurt and mix them in slowly. Berries can be fresh or frozen. If you want, you can add the chopped nuts and dark chocolate chips. These make the frozen yogurt taste and feel better. To make the flavors stronger, add a pinch of salt. One last time, mix it all together. Put the yogurt mixture into a container that won't let air in or an ice cream maker. If you are using an ice cream maker, make sure to churn the mixture according to the directions on the box until it is the consistency of frozen yogurt. It takes about 20 to 30 minutes most of the time. Put the container in the freezer if you're not going to use an ice cream maker. You should take it out every 30 minutes and stir it really hard with a fork to break up any ice crystals. Do this again and again for two to three hours, or until the yogurt is thick and creamy.
