Ingredients: 2 salmon fillets. 4 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted. 1/4 cup feta cheese, crumbled. 1/4 cup roasted pine nuts. 2 tablespoons extra virgin olive oil. 2 tablespoons lemon juice. 1 tablespoon Dijon mustard. Salt and pepper to taste. Yarden Chardonnay or Sauvignon Blanc for pairing.
