This Blue Cheese Chicken Pasta Salad is a delightful combination of flavors and textures, perfect for a refreshing meal or side dish. Tender pasta, juicy chicken, tangy cherry tomatoes, and pungent blue cheese are tossed in a zesty vinaigrette for a dish that's both satisfying and flavorful.
Ingredients: 8 oz pasta. 2 cups cooked chicken breast, shredded or diced. 1 cup cherry tomatoes, halved. 1/2 cup red onion, thinly sliced. 1/2 cup crumbled blue cheese. 1/4 cup chopped fresh parsley. 1/4 cup olive oil. 2 tablespoons red wine vinegar. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the pasta. After draining, set it aside to cool. Cooked pasta, shredded chicken, cherry tomatoes, red onion, crumbled blue cheese, and chopped parsley should all be put in a large bowl. Salt and pepper should be mixed with olive oil, red wine vinegar, minced garlic, and whisked together in a small bowl. Pour the dressing over the pasta salad and gently toss to cover everything. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy! Serve cold.
