Ingredients: 1 lb beef stew meat, cut into bite-sized pieces. 1 cup pearl barley, rinsed. 3 carrots, peeled and sliced. 2 celery stalks, chopped. 1 onion, diced. 3 cloves garlic, minced. 8 cups beef broth. 1 can 14 oz diced tomatoes. 2 teaspoons dried thyme. 2 teaspoons dried rosemary. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Put the Instant Pot in saut mode and heat the olive oil. Put in the beef and brown it all over. Saut the garlic and onions until they smell good. Mix in the barley, diced tomatoes, thyme, rosemary, salt, and pepper. Add the beef broth and mix it in well. Close the lid of the Instant Pot and set it to pressure cook for 15 minutes. Then, turn off the saut mode. After the food is done cooking, let the pressure naturally drop for 10 minutes. Then, quickly drop any remaining pressure. If you need to, change the seasonings. Serve hot.
