These Brussels Sprouts, Bacon, and Bean Quesadillas are a unique and flavorful twist on a classic favorite. The combination of caramelized Brussels sprouts, crispy bacon, and black beans, all held together with gooey cheddar cheese, creates a mouthwatering filling for your tortillas. Perfect for a quick and satisfying meal!
Ingredients: 6 large flour tortillas. 1 lb Brussels sprouts, trimmed and thinly sliced. 6 slices bacon, chopped. 1 can 15 oz black beans, drained and rinsed. 2 cups shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. Salt and pepper to taste. Cooking oil for frying.
Instructions: Put the chopped bacon in a large skillet and cook it over medium-low heat until it gets crispy. Put the bacon on paper towels to soak up the extra grease after taking it out of the pan. Put the sliced Brussels sprouts in the same pan and cook them for 5 to 7 minutes, until they get soft and a little caramelized. Add pepper and salt to taste. Take it off the heat. Shred some cheddar cheese and put it on half of the flour tortilla that you just put in the pan. Put some sauted Brussels sprouts, crispy bacon, and black beans on top of the cheese. Put some filling in the middle of the tortilla, then fold it in half and press it down gently. It should be cooked for two to three minutes on each side over medium-high heat, or until it's golden brown and the cheese melts. Do the same thing with the rest of the tortillas and filling. After the quesadillas are done cooking, take them out of the pan and let them cool for one minute. Then, cut each one into wedges. Place the bean, bacon, and Brussels sprouts quesadillas on a plate. Top each with sour cream and chopped cilantro. Have fun with your tasty quesadillas!
