These Jam Drop Cookies, inspired by Donna Hay's recipe, are buttery, tender, and filled with a burst of sweet jam. They are perfect for afternoon tea or any time you crave a delightful treat.
Ingredients: 200g 1 1/2 cups all-purpose flour. 150g 2/3 cup unsalted butter, softened. 100g 1/2 cup granulated sugar. 1 tsp vanilla extract. 1 large egg. Jam any flavor of your choice.
Instructions: Preheat the oven to 180C 350F. Line a baking tray with parchment paper. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the vanilla extract and egg to the bowl, and mix until well combined. Gradually add the flour to the wet ingredients and mix until a dough forms. Roll the dough into small balls and place them on the prepared baking tray, leaving space between each ball. Using your thumb or the back of a teaspoon, make an indentation in the center of each cookie. Fill each indentation with a small amount of your favorite jam. Bake the cookies in the preheated oven for 12-15 minutes or until they are lightly golden around the edges. Remove the cookies from the oven and let them cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
