The outside of these garlic roasted potatoes is crispy, and the inside is soft. The garlic and herbs make them taste great together. They go well with any meal and taste great on their own.
Ingredients: 1.5 lbs baby potatoes, halved. 3 tablespoons olive oil. 4 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. Put potatoes in a large bowl and add olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss the potatoes so that they are evenly covered. Put the potatoes on a baking sheet in a single layer. Put the potatoes in an oven that has already been heated up. Roast them for 25 to 30 minutes, stirring them once, until the outside is golden brown and crispy and the inside is soft. Take it out of the oven and add chopped parsley as a garnish before serving.
