Ingredients: 1 cup champagne. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 3 large eggs. 1 teaspoon vanilla extract. 1/2 cup sour cream. 1 cup whipped cream. 1/2 cup fresh strawberries, diced.
Instructions: Preheat the oven to 350F 175C and line a cupcake tin with paper liners. In a bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the champagne. Begin and end with the dry ingredients. Fold in the sour cream until the batter is smooth. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely. Once cooled, crumble the cupcakes to create the cupcake layer in the parfait. In serving glasses, layer the cupcake crumbles, whipped cream, and diced strawberries.
