some dinners i’ve made myself this year that i’ve really really liked

-eggplant parm (made with the marcella hazan tomato sauce recipe)

-a thai inspired red peanut curry with chicken and a bunch of vegetables lol

-black bean burger + (frozen from trader joe’s) sweet potato fries topped with a sauce i made with some sour cream, lime juice, and cholula, cilantro, and queso fresco

-lemony tilapia cooked on a bed of thinly sliced yukon gold potatoes (inspiration from atk)

-margherita pizza

-cannellini beans, sun dried tomatoes, spinach, halloumi

-roasted salmon and root veg

-easier to scale recipes down without being left with a bunch of excess main ingredients

-tofu, beans, lentils, etc are generally good for a long time without needing to be frozen

-it’s often a lot cheaper than buying meat unless youre like exclusively buying impossible/beyond/etc fake meat

-(even then some fake meat is still cheaper than the real thing and it cooks faster and is easier to cook for one or two servings at a time)
