This easy to make Crockpot Chicken Noodle Soup is a classic that's great for cold weather because it's hearty and soothing.
Ingredients: 1 lb chicken breasts. 8 cups chicken broth. 4 carrots, sliced. 4 celery stalks, sliced. 1 onion, chopped. 3 cloves garlic, minced. 2 bay leaves. 1 tsp dried thyme. 1/2 tsp dried rosemary. Salt and pepper to taste. 8 oz egg noodles.
Instructions: Place chicken breasts, chicken broth, carrots, celery, onion, garlic, bay leaves, thyme, rosemary, salt, and pepper in a crockpot. Cover and cook on low for 6-8 hours, or until chicken is cooked through and vegetables are tender. Remove chicken from crockpot and shred using two forks. Return shredded chicken to the crockpot. Add egg noodles to the crockpot, cover, and cook on high for an additional 15-20 minutes, or until noodles are tender. Discard bay leaves before serving.
