Ingredients: 1 ripe banana. 1 cup unsweetened almond milk. 2 tablespoons unsweetened cocoa powder. 1 tablespoon honey or maple syrup optional, adjust to taste. 1/2 teaspoon pure peppermint extract. 1/4 teaspoon vanilla extract. 2-3 ice cubes. Fresh mint leaves for garnish optional.
Instructions: Peel the ripe banana and place it in a blender. Add almond milk, unsweetened cocoa powder, honey or maple syrup if using, peppermint extract, and vanilla extract to the blender. Blend all the ingredients until smooth and creamy. Add ice cubes and blend again until the smoothie is chilled and frothy. Taste the smoothie and adjust sweetness or mint flavor if needed. Pour the Paleo Thin Mint Smoothie into a glass, garnish with fresh mint leaves if desired, and enjoy! You can also add crushed dark chocolate or cacao nibs for an extra chocolatey crunch.
