A hearty and flavorful soup featuring the rich combination of sweet potatoes and Italian sausage. Perfect for a quick and satisfying dinner in just 40 minutes.
Ingredients: 2 medium sweet potatoes, peeled and diced. 1 lb Italian sausage, casings removed. 1 onion, finely chopped. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups chicken broth. 1 tsp dried thyme. 1 tsp paprika. Salt and pepper to taste. 2 cups kale, chopped. 1/2 cup heavy cream.
Instructions: Break up the Italian sausage into crumbles and brown it in a large pot over medium-low heat. Put in the minced garlic and chopped onions. Saut until the onions become clear. Then add the chicken broth, thyme, paprika, salt, and pepper. Also add the diced sweet potatoes and tomatoes. Once the soup starts to boil, lower the heat and let it cook for 20 minutes, or until the sweet potatoes are soft. Put in the chopped kale and cook for another 5 minutes, until the kale is soft. Add the heavy cream and stir it in. Let the soup cook for five more minutes. If you need to, change the seasonings and serve hot.
