OP, I think you are on to something here. Bird branding is the best. I am in no way biased as a birdwatcher and fan of a bird themed men’s hockey team.
The Ruffed Grouse is the state bird of PA, so I’d reserve that for a Philly expansion. Philly already has several bird teams. Give the women a fluffy bird mascot to hang out with Gritty. Grouses make a distinct drumming sound, and frequently when I think of Philadelphia I think of the PME Drumline and Philly Elmo.
While this is less whimsical, I like the alliteration of Pittsburgh Peregrines, my go-to suggestion for a Pgh expansion team name. They’re the fastest animals on earth, which is perfect for the fastest sport on ice. There is also a nesting pair of peregrine falcons, Carla and Ecco, on the Cathedral of Learning on the campus of the University of Pittsburgh.
As for New York, I love that bee-eaters already wear Sirens colors! The state bird of NY, the eastern bluebird, could learn from them. I think another bird that would be well-suited to both alliteration and the loud, chaotic nature of the Sirens is the Nuthatch. Specifically, the White-Breasted Nuthatch. These birds love to hang out upside down, they never shut up, and they almost sound like an alarm siren. The wee woo chant will never die.
