Ayyyy this was fun!!! The sweet potato gnocchi from TJs thrown in with some spinach for protein, and I made a side of cheesy cabbage and tossed some breadcrumbs on top (that were formerly herb croutons). This took about 7 minutes to make and the flavors were incredible for such a quick (and cheap) meal

Looks bland but i assure is not. Carrots celery and onion in veggie broth blended together w/ cottage cheese, manchego, spices, and pastina to create this ultra comforting and crazy flavorful dish. And it makes a shit tonnn. Drizzle high quality olive oil and cracked pepper on top and HOO mama

Plant BASED chili(?). This is how i do it and it smacks so fuckin hard. It’s soy chorizo, beans, onions, bell peppers, and coconut cream with garam marsala spice blend. Topped with cashew yogurt, cilantro, and shallots and a tiny potato bc i like them
