Ingredients: 2 pork tenderloins about 1.5 lbs each. 8 slices of bacon. 1/2 cup brown sugar. 2 teaspoons garlic powder. 2 teaspoons onion powder. 2 teaspoons paprika. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 teaspoon cayenne pepper optional.
Instructions: Set the oven temperature to 375F 190C. Brown sugar, onion powder, garlic powder, paprika, salt, black pepper, and cayenne if using should all be combined in a small bowl. Make sure the pork tenderloins are thoroughly coated by evenly rubbing them with the spice mixture. Four bacon slices should be wrapped around each pork tenderloin; if needed, secure the bacon with toothpicks. To make cleanup easier, place the bacon-wrapped pork tenderloins on a baking sheet covered with parchment paper or aluminum foil. Bake for 25 to 30 minutes, or until the pork reaches an internal temperature of 145F 63C, in a preheated oven. You can broil the tenderloins for a further two to three minutes if you want the bacon to be crispier, but keep a close eye on them to avoid burning. After cooking, take the tenderloins out of the oven and give them five minutes to rest before slicing. Serve the pork tenderloins hot after slicing them into medallions.
