Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 2 teaspoons ground cinnamon. Cream Cheese Glaze:. 4 ounces cream cheese, softened. 1 cup powdered sugar. 1 teaspoon vanilla extract. 2-3 tablespoons milk.
Instructions: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough into two equal parts and shape each part into a log about 2 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 1 hour. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled cookie dough logs into rounds about 1/4 inch thick and place them on the prepared baking sheet. Bake the cookies for 10-12 minutes or until the edges are lightly golden. While the cookies are baking, prepare the cream cheese glaze by mixing together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add milk to the glaze mixture until it reaches your desired consistency. Once the cookies are done baking, let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Drizzle the cream cheese glaze over the cooled cookies. Serve and enjoy!
