Ingredients: 1 cup orzo pasta. 1 can 15 oz garbanzo beans, drained and rinsed. 1 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/2 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh basil, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup kalamata olives, pitted and sliced. 2 tablespoons olive oil. 2 tablespoons red wine vinegar. Salt and pepper to taste. Lemon wedges for garnish.
Instructions: Cook orzo pasta according to package instructions. Drain and let it cool. In a large bowl, combine the cooked orzo, garbanzo beans, cherry tomatoes, cucumber, red onion, parsley, basil, feta cheese, and kalamata olives. In a small bowl, whisk together the olive oil and red wine vinegar. Season with salt and pepper to taste. Pour the dressing over the salad and toss to combine.
