Ingredients: 250g herb tagliolini pasta. 2 tablespoons extra-virgin olive oil. 2 cloves garlic, minced. Zest of 1 lemon. Juice of 1 lemon. 1/2 cup grated pecorino cheese. Salt to taste. Black pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Follow the directions on the package to cook the herb tagliolini pasta until it is al dente. Drain the pasta and set it aside. Save a cup of the pasta water. Put the olive oil in a big pan and heat it over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Add the lemon juice and zest to the pan and mix them together. Add the grated pecorino cheese slowly and stir so that it melts into the sauce. If the sauce is too thick, you can thin it out by adding some of the pasta water you saved. To taste, add salt and black pepper to the sauce. Toss the cooked herb tagliolini pasta in the sauce in the pan until it is covered evenly. Add chopped fresh parsley on top of the hot pasta to serve. Have fun!
