I made the most exciting risotto. Handpicked squash blossoms from our own backyard! I’ve tried a few meal kits over the years just for a fun experiment. But I have to say, not all of them seem to understand that Gluten Free Vegan food needs to all be cauliflower based and virtually tasteless. Thankfully, I’m a pretty big kitchen whiz and have been able to remedy some of the lackluster ones with additional ingredients and actual seasonings. Broiled eggplant with white miso and @essiespice Coco For Garlic sauce with Black Rice. I’m tryin to get really good at caring for myself and at remembering to eat regularly. I’m making sure to let my body have well balanced nourishment no matter if it’s 4AM or 10PM! This eggplant was a late night dinner earlier this week when I needed something quick and easy, but it tasted so lush and spicy and perfect. The salty sweet miso with the spicy sweet garlic sauce blended so perfectly on the slightly charred and smoky but creamy eggplant. The chewy texture of the medium grain rice along with a pop of brightness from cilantro and crunchy zing of smoked chili flakes from @mountainroseherbs along with toasted sesame seeds...
