This Spicy Cauliflower Rice with a hint of cinnamon offers a unique twist to a classic dish. It's flavorful, satisfying, and perfect for a quick and healthy vegan meal.
Ingredients: 1 medium head cauliflower, grated. 2 tablespoons olive oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon ground cinnamon. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. Fresh cilantro, for garnish.
Instructions: Warm up a big pan with olive oil over medium-low heat. Put in the minced garlic and chopped onion. Saut until the onion turns clear. Grate the cauliflower into the pan and mix it in well. Add the ground cinnamon, cumin, paprika, cayenne pepper, salt, and pepper to the cauliflower mixture and mix them in so that the spices are spread out evenly. Stirring every now and then, cook for about 5 to 7 minutes, until the cauliflower is soft and slightly browned. Take it off the heat and add fresh cilantro on top before serving.
