This delicious and healthful Paleo Apple Crumble Parfait will satisfy your sweet tooth while maintaining a Paleo lifestyle. Its perfect blend of flavors and textures comes from the use of fresh apples, creamy coconut yogurt, and a nutty crumble topping.
Ingredients: 2 medium-sized apples, peeled, cored, and chopped. 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup unsweetened shredded coconut. 2 tablespoons coconut oil, melted. 2 tablespoons honey or maple syrup. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon sea salt. 1 cup coconut yogurt dairy-free. 1/2 cup fresh berries e.g., strawberries, blueberries. Chopped nuts or seeds for garnish optional.
Instructions: Set the oven temperature to 175C 350F. Almond flour, coconut flour, shredded coconut, honey/maple syrup, melted coconut oil, ground nutmeg, ground cinnamon, and a small pinch of sea salt should all be combined in a mixing bowl. Until the mixture is crumbly, thoroughly mix. Arrange the crumble blend onto a baking sheet and bake for approximately 10 to 12 minutes, or until it turns a light shade of gold. To guarantee uniform browning, make sure to stir from time to time. Take it out of the oven and allow it to cool. Add the chopped apples to a saucepan with a little water and cook over medium heat until they are soft and tender, 8 to 10 minutes. To keep from sticking, stir from time to time. Turn off the heat and allow it to cool. To assemble, start with a spoonful of coconut yogurt in each serving glass or bowl. Then, add cooked apples, crumble mixture, and a handful of fresh berries. Until you reach the top of the glass or bowl, keep layering. Sprinkle the crumble mixture one last time, and if you'd like, add some chopped nuts or seeds as a garnish. To allow the flavors to meld, place the parfait in the refrigerator for at least half an hour before serving. Enjoy a chilled Paleo Apple Crumble Parfait after serving!
