Sweet Potato Bites with Feta Ingredients: 3 long, thin orange-flesh sweet potatoes (about 1.5 pounds) 2 tablespoons olive oil (for brushing or spraying) 2 teaspoons Italian Herb Blend (or any all-purpose seasoning) 4 ounces Feta cheese, crumbled 3 tablespoons Greek yogurt or sour cream 1/2 teaspoon Greek seasoning 1/4 cup thinly sliced green onion Directions: Preheat oven to 450°F (220°C).
