These cheesy bacon zucchini skins are a delicious keto-friendly appetizer or snack. They are loaded with flavor and make for a satisfying dish.
Ingredients: 4 medium zucchinis, halved lengthwise. 6 slices bacon, cooked and crumbled. 1 cup shredded cheddar cheese. 2 tablespoons chopped green onions. 1/4 teaspoon garlic powder. Salt and pepper to taste. Cooking spray or olive oil for greasing.
Instructions: Preheat oven to 400F 200C. Grease a baking sheet with cooking spray or olive oil. Scoop out the flesh from the zucchini halves, leaving about 1/4 inch of flesh intact. Place the hollowed zucchini halves on the prepared baking sheet. Sprinkle garlic powder, salt, and pepper evenly over the zucchini skins. Evenly distribute the crumbled bacon inside the zucchini halves. Top each zucchini half with shredded cheddar cheese and chopped green onions. Bake in the preheated oven for 15-20 minutes, or until the zucchini skins are tender and the cheese is melted and bubbly. Remove from the oven and let cool slightly before serving. Optional: Serve with sour cream or ranch dressing for dipping.
