Ingredients: 1 cup diced papaya. 2 ripe bananas, mashed. 1/2 cup shredded coconut. 1/2 cup sugar. 1/4 cup vegetable oil. 2 eggs. 1 1/2 cups all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the mashed bananas, diced papaya, shredded coconut, sugar, vegetable oil, and eggs. Mix until well combined. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; it's okay if there are a few lumps. Stir in the vanilla extract. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
