Chocolate Sticky Toffee Pudding for Two - Easy Dessert

A delightful parfait inspired by Grandmother's Kitchen Sticky Toffee Pudding. Layers of moist date cake, whipped cream, and rich toffee sauce.

Ingredients: 1 cup dates, pitted and chopped. 1 cup boiling water. 1 teaspoon baking soda. 1/4 cup unsalted butter, softened. 1 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. Pinch of salt. 1/2 cup chopped walnuts. 1/2 cup heavy cream. 1/4 cup toffee sauce. Vanilla ice cream optional.

Instructions: Set the oven to 350F 175C and heat it up. Prepare a baking dish by greasing it. Mix dates and baking soda together in a bowl. Boil water and pour it over them. Wait 15 minutes. Mix butter and brown sugar together in a different bowl. Add the eggs one at a time and beat well. Then add the vanilla and mix well. Add salt, baking powder, and flour and mix them together. Add this slowly to the butter mixture. Add the soaked dates and walnuts and mix them in. Put the batter in the baking dish that has been ready. Bake for 40 to 45 minutes, or until a toothpick comes out clean. Whip the heavy cream until stiff peaks form while the pudding bakes. Let the pudding cool down a bit after it's done. Cut it into squares, then put them in serving glasses with whipped cream and toffee sauce on top. Do it again, and then put a dollop of whipped cream on top. You can serve it with vanilla ice cream if you want to. Have fun with the tasty Sticky Toffee Parfait!
