These homemade mint cookies have a rich cocoa flavor with a refreshing hint of peppermint. They're a delightful treat coated in powdered sugar, reminiscent of homemade mints like Altoids.
Ingredients: 2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 1 large egg. 1/2 teaspoon peppermint extract. 1/4 teaspoon salt. 1/2 teaspoon baking soda. 1/2 cup milk. 1 cup powdered sugar for coating.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, cocoa powder, salt, and baking soda. In another bowl, cream the butter and granulated sugar until light and fluffy. Add the egg and peppermint extract to the butter-sugar mixture and beat until well combined. Gradually add the dry ingredient mixture to the wet mixture, alternating with milk, and mix until a dough forms. Scoop tablespoon-sized portions of dough and roll them into balls. Place the powdered sugar in a bowl. Roll each dough ball in the powdered sugar to coat evenly. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a fork. Bake in the preheated oven for 10-12 minutes, or until the cookies are set around the edges. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
