A light and tasty stir-fry with bright broccoli, tender shrimp, and a sharp chimichurri sauce.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 cups broccoli florets. 1/2 cup chimichurri sauce. 2 tablespoons olive oil. 1 red bell pepper, thinly sliced. 1 yellow onion, thinly sliced. 4 cloves garlic, minced. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and saut for 1-2 minutes until fragrant. Add the sliced onion and red bell pepper. Cook for 2-3 minutes until they start to soften. Stir in the broccoli florets and cook for an additional 3-4 minutes until they begin to turn tender. Push the vegetables to the side of the skillet and add the shrimp. Season with salt and pepper. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Pour the chimichurri sauce over the shrimp and vegetables. Stir to coat everything evenly and cook for an additional 2 minutes. Remove from heat and serve hot.
