Ingredients: 1 can 28 oz whole tomatoes, undrained. 1 cup fresh orange juice. 1/2 cup chopped fresh basil. 1/4 cup olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 teaspoon red pepper flakes. 2 cups vegetable broth. 1/2 cup heavy cream. Orange zest for garnish. Fresh basil leaves for garnish.
Instructions: Put the whole tomatoes and their juice into a blender with fresh orange juice. Mix until it's smooth. Put olive oil in a big pot and heat it over medium-low heat. When you add the chopped onion and garlic, cook them until they get soft. Blend the tomato and orange together and then add it to the pot. Add the salt, black pepper, red pepper flakes, and chopped basil. Add the vegetable broth and slowly bring the soup to a boil. Let it cook for 15 to 20 minutes so the flavors can mix. Add the heavy cream and stir it in. Simmer for five more minutes. If necessary, change the seasoning. Take the soup off the heat and pour it into bowls. Put orange zest and fresh basil leaves on top.
