Ingredients: 4 boneless, skinless chicken breasts, cut into 1-inch cubes. 1/2 cup pineapple juice. 1/4 cup soy sauce. 1/4 cup ketchup. 1/4 cup brown sugar. 2 tablespoons rice vinegar. 2 cloves garlic, minced. 1 teaspoon grated fresh ginger. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. 1 cup pineapple chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, garlic, and ginger to make the marinade. Place the chicken cubes in a resealable plastic bag and pour 1/2 of the marinade over the chicken. Seal the bag and marinate in the refrigerator for at least 1 hour, or overnight for best results.
