Fresh Fruit and Yogurt Cupcakes are a tasty treat that are full of the flavors of different fresh fruits and the smoothness of Greek yogurt. For a healthy and tasty snack or dessert, these are great.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup Greek yogurt. 1/4 cup unsalted butter, melted. 1 large egg. 1 teaspoon vanilla extract. 1 cup fresh mixed berries strawberries, blueberries, raspberries. 1/4 cup chopped mango. 1/4 cup chopped pineapple. 1/4 cup chopped kiwi. 1/4 cup chopped peach. 1/4 cup chopped apricot.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the sugar, baking powder, baking soda, and salt in a bowl with a whisk. Put the Greek yogurt, melted butter, egg, and vanilla extract in a different bowl. Mix the ingredients together well. Add the wet ingredients to the dry ones and mix them together just until they are mixed. It's best to add the fresh mixed berries, mango, pineapple, kiwi, peach, and apricot to the batter slowly. Spoon the batter into the cupcake liners in an even layer. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cupcakes out of the oven, let them cool in the muffin tin for a few minutes. Then, move them to a wire rack to cool all the way down. You can frost the cupcakes with your favorite yogurt-based frosting once they are cool, or you can just eat them plain.
