These dairy-free applesauce cookies are a spiced, soft-baked family classic. They are perfect for a sweet treat that everyone can enjoy, whether they are vegan or not.
Ingredients: 1 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/2 cup vegan butter, softened. 3/4 cup packed brown sugar. 1/4 cup granulated sugar. 1/2 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1 1/2 cups rolled oats. 1/2 cup raisins or dried cranberries optional.
Instructions: Preheat oven to 350F 175C. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves. In a large bowl, cream together vegan butter, brown sugar, and granulated sugar until smooth. Mix in applesauce and vanilla extract. Gradually blend dry ingredients into the wet ingredients. Mix in oats and raisins or cranberries, if using. Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten slightly. Bake for 10 to 12 minutes in the preheated oven, until edges are golden. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
