Enjoy a healthier twist on classic fried rice with this cauliflower-based version cooked to perfection in a slow cooker. Packed with vegetables and flavorful seasonings, it's a satisfying dish that's easy to prepare and full of nutrients.
Ingredients: 1 head cauliflower, grated. 2 carrots, diced. 1 cup frozen peas. 1 onion, diced. 3 cloves garlic, minced. 3 eggs, beaten. 1/4 cup soy sauce. 2 tablespoons sesame oil. 1 tablespoon ginger, minced. 1/4 cup green onions, chopped. Salt and pepper to taste.
Instructions: Grated cauliflower, diced carrots, frozen peas, diced onion, and minced garlic should all be put in a slow cooker. Add the beaten eggs and stir the mixture slowly. Cut up some ginger and put it in a small bowl. Add soy sauce and sesame oil. Pour it over the cauliflower mix in the slow cooker and mix it all together. On low heat, cover and cook for 4 to 5 hours, or until the vegetables are soft. Just before you serve, add the chopped green onions and salt and pepper to taste.
