Ingredients: 2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 1/4 cups granulated sugar. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsalted butter, melted. 2 large eggs. 1 teaspoon vanilla extract. 1 cup buttermilk. 1 1/2 cups semisweet chocolate chunks.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a medium-sized bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, combine the melted butter, eggs, and vanilla extract. Mix well. Add the buttermilk to the wet ingredients and stir until well combined. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fold in the semisweet chocolate chunks. Fill each muffin cup about 2/3 full with the muffin batter. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
