This Chicken in Artichoke Pan Sauce is a delicious dish. It has tender chicken breasts and a tasty sauce made from capers, white wine, and artichoke hearts. It has just the right amount of sour and savory flavors.
Ingredients: 4 chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 cup chicken broth. 1/2 cup dry white wine. 1 can 14 ounces artichoke hearts, drained and chopped. 2 tablespoons capers, drained. 2 tablespoons butter. 2 tablespoons fresh parsley, chopped.
Instructions: On both sides, salt and pepper the chicken breasts. Put olive oil in a big skillet and heat it over medium-high heat. The chicken breasts should be cooked through and golden brown on both sides after being added to the pan. This should take about 6-7 minutes per side. Take it out of the pan and set it aside. To the same pan, add the minced garlic and cook for one minute. Add the white wine and chicken broth, making sure to scrape up any browned bits on the bottom of the pan. Add the artichoke hearts and capers that have been chopped. Simmer the sauce for 5 minutes or until it gets a little thinner. Add the butter and stir it in until it melts and the sauce gets a little thicker. Add the chicken breasts back to the pan and cover them with sauce. Wait a few minutes to heat them all the way through. Put small pieces of chopped parsley on top of the chicken and sauce. Serve the chicken hot and add more sauce on top. Have fun!
