This frittata recipe is hearty and savory. It has crispy bacon, tender potatoes, and healthy kale, all held together with creamy eggs and melted cheddar cheese.
Ingredients: 6 eggs. 4 slices of bacon, chopped. 1 cup diced potatoes. 2 cups chopped kale. 1/2 cup shredded cheddar cheese. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Start by heating the oven to 350F 175C. Heat the olive oil over medium-low heat in a large skillet that can go in the oven. Put in the chopped bacon and cook it until it gets crispy. Get the bacon out and put it on paper towels to dry. Dice the potatoes and put them in the same pan. Cook for 8 to 10 minutes, until they are golden and crispy. Take them off and set them aside. Add the eggs, salt, and pepper to a bowl and whisk them together. Put the chopped kale in the pan and cook for about two minutes, until it softens. On top of the kale, spread out the cooked bacon, potatoes, and shredded cheddar cheese. Mix the eggs together and then pour them over the things in the skillet. Place the skillet in an oven that has already been heated and bake the frittata for 15 to 20 minutes, or until the top is set and slightly golden. Take it out of the oven and let it cool down for a few minutes before cutting it. Enjoy your tasty Bacon, Potato, and Kale Frittata while it's still warm.
