Instructions: Preheat your oven to 350F 175C. In a large oven-safe skillet, heat olive oil over medium heat. Add the diced sweet potatoes and saut for about 5 minutes or until they start to soften. Add the chopped spinach and continue to cook for another 2-3 minutes until the spinach wilts. In a bowl, whisk together eggs, milk, salt, pepper, dried thyme, and paprika. Pour the egg mixture evenly over the sweet potatoes and spinach in the skillet. Sprinkle crumbled feta cheese on top. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set and the edges are golden brown.
