Ingredients: 1 1/2 cups all-purpose flour. 1/2 teaspoon salt. 1 teaspoon baking soda. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon ground ginger. 1 cup pumpkin puree. 1/2 cup vegetable oil. 2 eggs. 1 cup granulated sugar. 1/2 cup chopped walnuts or pecans optional.
Instructions: In a large mixing bowl, combine flour, salt, baking soda, cinnamon, nutmeg, cloves, and ginger. In another bowl, mix pumpkin puree, vegetable oil, eggs, and sugar until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped nuts if using. Grease the inside of your slow cooker with cooking spray or oil. Pour the batter into the slow cooker, spreading evenly. Cover and cook on high for 2 to 3 hours, or until a toothpick inserted into the center comes out clean. Once done, turn off the slow cooker and let the pumpkin bread cool in the pot for 10-15 minutes before carefully removing and transferring to a wire rack to cool completely.
