These vegan lentil mushroom meatballs are a great alternative to regular meatballs because they are full of flavor and texture. It's great to put them on sandwiches, with pasta, or as an appetizer.
Ingredients: 1 cup cooked lentils. 1 cup finely chopped mushrooms. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 2 tablespoons tomato paste. 1 tablespoon soy sauce. 1 tablespoon nutritional yeast. 1 teaspoon dried oregano. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat oven to 375F 190C. In a large mixing bowl, combine cooked lentils, chopped mushrooms, breadcrumbs, onion, garlic, tomato paste, soy sauce, nutritional yeast, oregano, smoked paprika, salt, and pepper. Mix until well combined and the mixture holds together when pressed. Form the mixture into meatball-sized balls and place them on a baking sheet lined with parchment paper. Brush the meatballs with olive oil. Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and firm to the touch. Serve hot with your favorite sauce or pasta.
