For the holidays, these cute Sparkly Santa Cookies are a must. They taste great, are sweet, and are decorated to look like Santa Claus!
Ingredients: 1 cup vegan butter, softened. 1 cup powdered sugar. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 teaspoon salt. 1/2 cup red decorating sugar. 1/4 cup vegan chocolate chips. 1/4 cup shredded coconut.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix vegan butter and powdered sugar together in a large bowl until the mixture is smooth. Add vanilla extract and stir. Mix the flour and salt in slowly until they are well mixed in. Roll the dough into 1-inch balls, then coat them in red decorating sugar. Spread the balls out about 2 inches on the baking sheet that has been prepared. To make Santa's nose, press a chocolate chip into the top of each cookie. Shred the coconut and press it around the chocolate chip's base to make Santa's beard. When the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. Take out of the oven and let cool for 5 minutes on the baking sheet. Then move to a wire rack and let cool all the way through.
