This one-skillet recipe is a tasty twist on traditional manicotti. It combines the ease of cooking in a skillet with the rich tastes of three cheeses and meat sauce. Great for a quick and filling dinner during the week!
Ingredients: 8 uncooked manicotti shells. 1 pound ground beef. 1 small onion, chopped. 2 cloves garlic, minced. 1 24 oz jar marinara sauce. 1/2 cup water. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: Put ground beef, onion, and garlic in a large skillet. Cook over medium-low heat until the meat is no longer pink and the onion is soft. Get rid of any extra fat. Sauce and water should be mixed in. Bring up the temperature. Make sure the uncooked manicotti shells are covered in sauce when you add them to the pan. Lower the heat, cover, and let it simmer for 12 to 15 minutes, stirring every now and then, until the pasta is soft. Put mozzarella cheese, Parmesan cheese, dried oregano, salt, and pepper in a small bowl and mix them together. Once the pasta is done, use a spoon to carefully fill each manicotti shell with the cheese mixture. Put the lid on the skillet and cook for another 5 minutes, or until the cheese melts and starts to bubble. If you want, add fresh basil leaves as a garnish before serving.
