Fruit coulis (From Cookery the Australian Way) - Makes 1 cup (250ml)

250g of hulled strawberries, sliced mango or raspberries
1 tbsp (20ml) water
2 tbsp (40g) sugar
Method
Warm fruit and water in saucepan, stirring all the time. Bring to boil and remove from heat immediately.
Add sugar.
Push through sieve, cool and serve.
