These Baked Egg Cups with Caprese are a tasty and keto-friendly way to start the day. They are baked with eggs and full of fresh tomato, creamy mozzarella, and fragrant basil flavors. They're a great choice for breakfast or brunch.
Ingredients: 6 eggs. 1 cup cherry tomatoes, halved. 1 cup fresh mozzarella, diced. 1/4 cup fresh basil, chopped. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put olive oil in a muffin tin to grease it. Put a few cherry tomato halves, some diced mozzarella, and some chopped basil in each muffin cup. Be careful not to break the yolk when you crack an egg into each cup. Add pepper and salt. Place in the oven and bake for 15 to 20 minutes, or until the egg whites are set but the yolks are still flowy. Take it out of the oven and let it cool down for a few minutes.
