A filling and tasty vegan breakfast scramble made with crumbled tofu, spices, and a variety of tasty vegetables.
Ingredients: 1 block tofu, crumbled. 1 tablespoon olive oil. 1/2 onion, diced. 1 bell pepper, diced. 1 cup spinach. 2 cloves garlic, minced. 1 teaspoon turmeric. 1/2 teaspoon cumin. Salt and pepper to taste. 2 tablespoons nutritional yeast. 1 tablespoon soy sauce or tamari. 1 tablespoon fresh parsley, chopped optional.
Instructions: Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper. Saut until softened, about 5 minutes. Add minced garlic and crumbled tofu to the skillet. Cook for 3-4 minutes. Sprinkle turmeric, cumin, salt, and pepper over the tofu mixture. Stir well to combine. Add spinach and cook until wilted, about 2 minutes. Stir in nutritional yeast and soy sauce. Cook for an additional 2 minutes. Garnish with chopped parsley, if desired, before serving.
