Ingredients: 3 cups almond flour. 1/4 cup coconut flour. 1/2 cup arrowroot powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 6 large eggs. 1/2 cup coconut oil, melted. 1/2 cup maple syrup. 2 tablespoons vanilla extract. 1/2 cup unsweetened almond milk. 1 cup dark chocolate chips. 1/2 cup coconut cream. 1 tablespoon maple syrup.
Instructions: Preheat the oven to 350F 175C. Grease two 8-inch cake pans and line the bottoms with parchment paper. In a large bowl, whisk together almond flour, coconut flour, arrowroot powder, baking soda, and salt. In another bowl, beat eggs, coconut oil, maple syrup, vanilla extract, and almond milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until smooth. Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. To make the frosting, melt the dark chocolate chips in a double boiler or microwave, then stir in coconut cream and maple syrup until smooth. Place one cake layer on a serving plate and spread a layer of frosting on top. Top with the second cake layer and frost the top and sides of the cake. Refrigerate the cake for 30 minutes to allow the frosting to set before serving.
